#Breakfast in a Hurry!

So…we all know breakfast is the most important meal of the day. Blah blah blah BUT no really it is important to “break the fast” every morning!

So…you’re not a morning person and oh you don’t have time to make a “healthy” breakfast so you rush to the nearest fast food place you can find or even worse you skip it overall!

We’ve all been guilty at some point and time. What would you do if I told you breakfast can be as quick and healthy as you make it? This is not a joke 🙂

Here’s my go to 6 minute breakfast when I’m pushing it:

Gluten free Hot Cereal with cinnamon, honey apples & Walnuts and a cup of Goji Berry Green Tea.

1/2 cup of Arrowhead Mills Organic Quinoa Rice & Shine Hot Cereal (ready in 3 minutes)
2 cups of water ( 1 for cereal & 1 for tea)
1/2 Organic Gala apple (cubed)
1/2 tsp cinnamon
1/2 tsp of Earth Balance coconut spread
1/2 tsp of Organic Raw Honey
1 Tea bag
3 to 4 walnuts (chopped)

Bring 2 pans of water to a boil ( 1 for cereal & 1 for tea.) After about a minute, transfer one pan of hot water to your tea cup and steep for 5 minutes. Next, add your dry cereal to water and immediately lower heat and simmer for 2-3 minutes. Add your coconut spread to a small skillet over medium heat, add apple cubes and sprinkle with cinnamon and honey, sauté for 3-4 minutes until tender.

Mix your apples with your hot cereal, top with walnuts and you’re good to go!

#Rainy Day with a 3-Pepper Quiche

After the visit of #nemo Mother Nature decided that she was not done with her mood swing. We woke up this morning to not only big piles of snow but also drizzles of rain. Ohh this is going to be a dreary day. This was not expected, I will be attending Toy Fair NYC today and definitely don’t want to walk around the Javits center with wet squeaky boots!

I mean really?! Who pissed Mother Nature off?! I want names people, because she is upset. We were enjoying sunny days and clear skies, now this?

Welp, instead of my mood going sour because of the yucky weather, I decided to whip up something for our spirits.

So I’m calling this one “The Rainy Day Quiche”.


Handful of chopped red, yellow and orange sweet peppers
1/3 cup of scallions
Pinch of garlic powder
Pinch of cayenne pepper
Pinch of basil
4 eggs
1/3 cup of almond milk

(Serving size 2)

After chopping up then peppers and onions, I mixed in the remaining ingredients.


I must say ramekins come in rather handy. I use them for serving soup, sauces and snacks. But this would be the first time I actually used them for their real purpose; baking.

I turned the toaster oven on 350 degrees and let the dishes bake for 25 minutes, because they are mini quiches, the cook time is a lot less.

While the quiches were rising, I fried a few slices of turkey bacon and prepared a Kale and Mint green monster smoothie. I definitely think this would put a little pep in our steps.

Since we got an early start, we can actually set aside a few minutes to sit and enjoy our breakfast before facing Mother Nature.

Over the Hump Breakfast On-the-Go

Aww yes good ol’ hump day, the feeling where “half the week is behind you and the other half is patiently waiting” really never gets old.

I decided to perk up the week! Given that I sent LaurenAsh to work yesterday with a container of Nature’s Path EnviroKidz Peanut Butter Puffs and a single box of almond milk. Now I must admit Blue Diamond’s mini almond milk box is a nifty little item to have on days where you don’t feel like cooking breakfast.

However, this morning I felt a little bad. So I decided to whip up a quick little something.


4 eggs
1/2 cup of almond milk (unsweetened)
Handful of Kale leaves
2 mini sweet red peppers
Pinch of garlic powder
Pinch of cayenne pepper
Spoonful of butter or coconut spread
Oven set to 350 degrees
Muffin pan

First I sautéed the peppers and kale leaves(pulled into small pieces) in coconut spread.

While that sautéed I tossed the remaining ingredients in a small mixing bowl.
Once the peppers and kale was finished, all of the ingredients were mixed together.

I greased 6 cups of the muffin pan, after all this would be a quick one. Once that was finished, the mixture was added.

After getting fully dressed, dogs were fed and lunch was packed, my mini egg frittatas were finished.

Yummy….I do believe today will be a good day! Hope the same for you! 🙂
