This morning we are taking a little excursion to Mexico and enjoy a healthy dosage of “Rancher’s eggs” or “Huevos Racheros”.

This traditional and popular dish was created on rural Mexican farmlands and now in our modern day kitchen. 🙂

It can be created in a few varieties but will always have the 3 basic ingredients: fried eggs, corn tortillas and a tomato-chili sauce.

I decided to make a homemade chili sauce by slowly simmering, green peppers, onions, red peppers, garlic and organic tomato paste with a dash of cayenne pepper.

Instead of a side of rice, guacamole or refried beans, I went with pan-fried plantains tossed in honey butter and a few slices of avocado.

Yummy, the perfect combination.

#HappyMonday Traveling to Mexico and Back

So over the weekend, we decided to take a little trip to Mexico. I turned on salsa music, did a few moves to the kitchen, pulled out some ingredients from the fridge and went to work.

Should you want to know what I packed for this voyage…take a look!

Ingredients: 

4 eggs

4 sliced in half corn tortillas

1/2 cup of diced red, green and yellow peppers

1 slice of sweet onion

1/2 clove of garlic, minced

1/2 tbsp of butter

Muffin pan

Crank up the Mariachi band and set the oven to 350 degrees! 

Use the butter to saute` the veggies

Whip the eggs into another pan and scramble

I hope you aren’t forgetting to do some quick moves with your feet while scrambling. Try not to get to carried away, I thought the spoon was a maraca and flung my egg mixture across the counter. 🙂

Once the eggs are almost finished, add in the veggies.

Use the few seconds left on the eggs to place the tortillas in the muffin cups.

Now it’s time to put it all together!

I have a massive muffin pan as you can tell. But this concoction makes about 8 tortilla cups.

Place those babies in the oven. Oh Snaps! My favorite song is on..as I sing “No se` Mañana”  I decided to cook a few slices of bacon while the tortillas brown.
