I decided that our 1st meal of the new year will be something simple and fresh so that’s what I’m calling this one.
The Simple & Fresh Omelet
2 brown cage-free eggs
3 mini sweet peppers (one of each- yellow, orange and yellow)
1 tbsp of gluten and dairy-fee butter (earth balance)
1 half of avocado
1 tsp of basi
1 slice of tomato (chopped)
While the peppers sautéd, I whipped the eggs until the mixture was slightly fluffy and poured into the pan.
Once the egg cooked to perfection, I sliced the avocado and folded into the omelet.
To make it all complete the omelet was accompanied by a few slices of cantaloupe.
