Pumpkin! Pumpkin! OoLaLa

Why is it when the holidays come we suddenly have a craving for anything pumpkin? Ohhh wait that doesn’t happen to you? Just me?! Hhmmph!

Welp in order to satisfy my seasoning craving, I decided to make some delicious pumpkin spice donuts. Now I don’t know whether or not they’ll actually be delicious, since its my first time making them but I can only hope that it’s true! So come along the pumpkin ride with me.

Ingredients:
1 1/2 c. of Bob’s Red Mill All Purpose Flour
1/3 c. of milled flax seeds
1 tsp of baking soda
2 brown eggs
1 tbsp of vanilla
1/2 c. of gluten-free butter (country crock is what I used before I discovered Melt)
1/2 tsp of salt
1/2 c. of brown sugar
1 can of pumpkin
A little something extra for the spice

My little something extra is the 4-Pepper Pumpkin Spice seasoning from the famous Mannheim Steamroller! If you haven’t checked out there music, do it and if you haven’t checked out their culinary works, better get started! I listened to their Holiday cd the whole time I was baking these donuts. 🙂

Back to business, so I made sure the eggs and butter cool to room temperature. Whisked the eggs with the vanilla extract.

Whipped the butter and brown sugar.

Added in the pumpkin.

Mixed all of the dry ingredients.

Folded the pumpkin and flour mixture together.

Then we ready to hit the oven. This small amount of mixture will make about 4-5 donuts depending on the thickness that is desired.

Bake on 350 for about 15 mins and we are set and fluffy!
